Vegan Chocolate Stuffed Muffins

Followed Joy the Baker's Vegan Chocolate Avocado Cake recipe, but made muffins and stuffed them prior to baking.

 
 
For the Muffins:
3 c A-P flour
6 T unsweetened cocoa powder
1/2 tsp salt
2 tsp baking powder
2 tsp baking soda
2 c granulated sugar
1/4 c olive oil
1/2 c soft avocado, about 1 medium avocado
2 c water
2 T vinegar
2 tsp vanilla extract
 
For the Filling:
Cherries, equal to amount of muffins
Walnuts, chopped
  • Pit each cherry
  • Stuff with chopped walnuts

 
Make the Muffins: 
  • Process avocado, water, vinegar, sugar, oil, and cocoa in food processor until smooth.
  •  Add vanilla extract, baking powder, and baking soda. Process until smooth.
  • Add flour. Pulse to combine.
  • Scoop 1 T batter per muffin container. Place stuffed cherry in center and top with 1 to 1 1/2 T of batter, until cherry is completely covered. Fill with enough batter that there is no mound in the center.
  • Bake 350F for 15-18 minutes.
