Caramelized Peanut Butter Banana Muffins

Followed Joy the Baker's Peanut Butter Banana Bread Recipe, but caramelized the bananas and made muffins.

 
  • I also divided the recipe in half, and substituted some homebrew Saison for banana.

For the bananas:
2 ripe bananas
  • Peel bananas, and slice into large pieces
  • Line a cookie sheet with aluminum fool and grease.
  • Place the bananas on the sheet and bake at 400 for 5-10 minutes, flipping once. Bananas should be golden on the outside.
For the Muffins:
1 c mashed ripe bananas
1/3 to 1/2 c beer (I used saison)
1/3 c greek yogurt
1/3 c peanut butter
3 T butter, melted
2 large eggs
1/2 c granulated sugar
1/2 c brown sugar
1 c whole wheat flour
1/2 c A-P flour
1/4 c ground flaxseed meal
3/4 tsp baking soda
1/2 tsp salt
1/2 tsp ground cinnamon
1/4 c chopped dry roasted peanuts

Make the Muffins: 
  • Mix dry ingredients.
  • Whisk bananas, yogurt, and peanut butter together. Add eggs, butter, and sugars. 
  • Mix wet and dry. Add peanuts
  • Allow to sit for 5 minutes to set up.
  • Scoop 2 T batter per muffin container.
  • Bake 350F for 15-18 minutes.
