Red Potato Salad

Potato Salad for a Crab Boil. It was so good, there was none to take home. 



Followed Paula Deen's Red Potato Salad. Made some minor changes to it. Subbed apples for green pepper. Add parsley.

Dressing:
2 T mayo
1 T olive oil
1 tsp white balsamic
2 tsp spicy brown mustard

pepper, to taste

  1. Whisk all ingredients together, set aside. 

Ingredients:
11 red potatoes
1/2 cup golden delicious apple
3 green onions
1/4 cup yellow onion (soaked before cutting)
2 parsley sprigs

  1. Boil potatoes for 10 minutes 
  2. While potatoes boil, chop apple, green onions, yellow onion, and parsley sprigs.
  3. Remove potatoes from water and place in ice water bath to stop cooking.
  4. When potatoes are cool, cut into bite-size pieces. 
  5. Combine ingredients, mix in dressing.
