Carnitas Chicken Tacos

Followed Closet Cooking's Slow Cooker Chicken Carnitas Tacos.

Modified the juices and used beer, still based on his recommendation. Only followed the recipe for the slow cooker portion. 

Carnitas ingredients:
  • 1 1/2 pounds chicken breasts
  • 1 cup Brett Ale (Old School/New School)
  • 4 cloves garlic, chopped
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Method:
  1. Place the chicken in the slow cooker along with the mixture of the orange juice, lime juice, garlic, chili powder, cumin, oregano, salt and pepper and cook on low until tender, about 6-8 hours.
  2. Shred chicken.
  3. Assemble tacos. 

        Taco Fillings:
        • Carnitas chicken
        • Black and red kidney beans
        • Slaw
        • Avocado, sliced


        Assembly: Fill a heated corn tortilla with lamb, beans, slaw, and avocado.
