Blue Cornmeal Buttermilk Pancakes

Sunday pancakes with cornmeal and buttermilk. Cornmeal Buttermilk Pancakes.

For the Pancakes:
3/4 cup all purpose flour
1/4 cup whole wheat flour
1 cup blue cornmeal
2 T sugar
1/2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 1/4 cups buttermilk
2 large eggs
3 T unsalted butter, melted, cooled


Make the pancakes: 
  • Mix dry ingredients. Whisk wet ingredients, blend with dry.
  • Allow to sit for 10 minutes to set up.
  • Pour about 1/4 cup batter onto buttered griddle for each pancake.
