Burrito: Green Pt. 2 Greenoa Burrito

More green ingredients for a meatless burrito.





Fillings: 
    • Quinoa
    • Frozen corn, sauteed
    • Green bell pepper, chopped and sauteed
    • Onions, chopped and sauteed
    • Black beans
    • Garlic powder
    • Cumin
    • Fresh spinach, chopped
    • Parsley, chopped
    • Cilantro, chopped
    • Greek yogurt
    • Salsa Verde


    Greenoa: Twist on Pinch of Yum's Green Mexican Rice
    • Cook quinoa according to directions (1:2 quinoa to water)
    • Blend in mini food processor, to form paste:
      • 1 cup spinach
      • 1 T salsa verde
      • 1 garlic clove
      • 1/3 cup cilantro leaves
    • Mix green paste with quinoa
    • Scramble eggs
    • Layer all on warmed flour tortilla. Roll and pan-fry to close. Split between two. 
    Assembly:
    • Chop and combine:
      • 1/2 cup spinach
      • few sprigs of cilantro
      • 1/4 cup greek yogurt
    • Combine sauteed ingredients: beans, corn, onion, green pepper.
    • Spread ingredients on tortilla.
    • Roll and pan-fry to close. Split between two. 
    • Top with guac or avocado, and hot sauce.
